In the book, “Young at any age,” Dr. Vicente Mera highlights the remarkable health benefits of kale, stating that it provides 50% more calcium than milk, three times more vitamin C than oranges, and four times more folic acid than eggs. Moreover, he emphasizes that the antioxidants found in kale are resistant to heat, making them effective in protecting other foods from oxidation.

Dr. Olivier Courtin-Clarins, an anti-aging expert, echoes Dr. Mera’s sentiments in his book, “Bella in the Plate,” describing kale as “ultra-vitaminised.” He recommends incorporating kale into smoothies or cold soups to reap its nutritional benefits.

Beyond its nutritional value, kale is also renowned for its satiating properties. Dr. Mera emphasizes that kale’s high fiber and low-calorie content make it incredibly filling, making it an ideal addition to weight loss diets.
